Recipe: Sunset Sautéed Vegetables



1 fresh beetroot sliced into thin lengths or shredded

1 carrot - cut into strips

1 spring onion - sliced

3 small red onions - sliced

1 yellow pepper - sliced

large handful of fresh green beans - topped and tailed

1 lemon - juice

1 clove garlic - crushed

dash of tamari sauce to taste



What to do:

Add a drop of oil to a pan and add the red onions, fry gently and then add the spring onion and crushed garlic.  Add the beetroot, carrot and then the pepper, sautéing for a few minutes until soft.  Add the tamari, lemon juice and beans.  Cook for a further few minutes until soft but still maintaining texture.  

Top with a queeze of lemon and serve.


Great for anyone wating to add more colour to their lives.  The beetroot makes this quite sweet so is great for children who are particular about their veggies.  Cyclists we had you in mind too when we designed this one!
