2 fresh coconuts (flesh and water)
2 heaped tablespoons protein powder (I used Pulsin Pea Protein)
3 tablespoons cocoa
1 sneaky carrot
6 squishy dates
1 tablespoon lecithin granules
1 1/2 tablespoons coconut oil
1 teaspoon vanilla bean extract
pinch of Himalayan rock salt
What to do:
Place all the ingredients into a blender and whizz until smooth.
Pour into a glass container and pop in the fridge until ready to serve and share.
The mousse may be frozen and makes an awesome ice-cream. However please note that once frozen it takes a while to defrost, allow around 30 minutes for it to soften.
